Description
Taking advantage of the great organoleptic qualities of some international and autochthonous semi-aromatic vines (mainly Chardonnay, Glera, Incrocio Manzoni) and of all the materials obtained from them: wine, musts, pulps and the same peels, we have created a product of very high quality qualitative level. Distillation takes place in five distinct phases. The first four distillations have the task of separating and excluding unwanted chemical and organic presences. The fifth distillation, performed with a last generation alembic, has the task of selecting the delicate aromatic presence of the vines. The final gradation is kept at rest for a short time and then poured into a bed of natural coals and dried birch bark flakes. Filtration takes place in various phases; by decanting, followed by a sieving with linen cloths, a roughing with traditional filters, a micro organic cleaning in electrostatic tension and to finish with tangential filters, making the product totally and perfectly pure. O de V with full alcohol content is flavored by infusion by cold maceration of the cedro peels for 40 days, after which the product is diluted and brought to the final alcohol content of 40%.
